Our
philosophy
To produce great wines, we believe in the harmonious union of a terroir and exceptional grape, conditions fulfilled and sublimated by a meticulous traditional vinification.
Our
Cuvées
Our grapes are harvested by hand and mechanically. The grapes ripen in the shade of their leaves and are harvested when fully ripe at the end of the supper, before being placed in concrete tanks to allow thermal inertia. The wine ferments for three weeks without cooling, which gives it is natural aroma of exceptional quality and enhances its raw material. It is then aged in French oak barrels for twelve months, to give it aromatic complexity and roundness on the palate.
Our wines are complex and intense, grouped into two cuvées: Cuvée Pavillon Rouge and Cuvée Pavillon Blanc.
